Thai Chicken Skewers and Thai Noodle Salad

Ingredients for Chicken Skewers

  • 1 pound chicken tenders
  • 1 can coconut milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • A couple dashes of ground Coriander seed
  • 1/2 teaspoon fresh ginger
  • Bamboo skewers

Ingredients for Chicken Skewers

  1. Mix the chicken with all other ingredients (except for skewers) and marinate for at least 1-2 hours
  2. When you’re ready to cook, add each individual tender to a wet bamboo skewers.
  3. Oil your grill and grill the chicken for 5-7 minutes per side.
  4. If you don’t have a grill, you can cook the chicken in the oven. Preheat your oven to 400 degrees and roast for 15-18 minutes, flipping halfway.
  5. Serve the skewers with peanut sauce of your choice, I used the Spicy Peanut Vinaigrette from Trader Joe’s.

Ingredients for Thai Noodle Salad

  • 2 cups broccoli slaw (I used the packaged one from Trader Joe’s)
  • 1/2 package of noodles of your choice (rice noodles, spaghetti, linguini all work). I used spaghetti
  • 1/2 cup cilantro, chopped
  • 2 cucumbers, seeded & chopped
  • 1 cup peanut vinaigrette sauce (same one you use for the skewers)
  • 1 lime, juiced
  • 1/2 cup chopped peanuts

Instructions for Thai Noodle Salad

  1. Cook pasta according to package instructions
  2. Toss all of the vegetables in a large bowl. Add noodles. Toss with the Peanut Sauce & lime juice until everything is well coated. Top with peanuts and serve immediately.

IF YOU WANT TO MAKE YOUR OWN PEANUT SAUCE, I mixed together 2 tablespoons of creamy peanut butter, 1/2 cup soy sauce, 1 teaspoon sesame oil and a little bit of water and mixed that with the noodles for my toddler
