Cheesecake Factory Santa Fe Salad & Avocado Eggrolls

One of my favorite past times with my family is going to #cheesecakefactory for dinner. My order was always the same – avocado eggrolls and their santa fe salad.

Ingredients for Salad

  • chicken breast
  • teriyaki marinade
  • 1 can corn
  • Romaine lettuce
  • 1 can black beans, rinsed and drained
  • monterey jack or Mozarella cheese
  • tomatoes, diced
  • 1/2 oz. cilantro leaves
  • 2 cups cilantro lime vinaigrette
  • Tortilla strips

Ingredients for Salad Dressing

  • 1/2 cup olive oil
  • 1/4 cup fresh cilantro
  • 1/4 cup peanut butter (I prefer natural)
  • 3 cloves garlic, peeled and smashed
  • 1 Tbsp. brown sugar
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. lime juice
  • 1 tsp. lime zest (approx. zest of one lime)
  • 1 tsp. sesame oil
  • Blend in blender

INSTRUCTIONS FOR SALAD

  1. Marinade chicken breasts in teriyaki sauce for 1-2 hours
  2. Preheat oven’s broiler to high
  3. Blend all dressing ingredients in food processor blender
  4. Place the chicken breasts in oven for 20-25 minutes or until fully cooked
  5. Make small slices in tortilla bread and bake in 400 degree oven for 15-20 minutes until crispy
  6. Place the chicken, corn, lettuce, and black beans, into a large mixing bowl. Add the Cilantro Lime Peanut Vinaigrette and toss well.
  7. Sprinkle cheese, diced tomatoes, and cilantro leaves over each individual salad before serving.

Ingredients for Eggrolls

  1. 1 large avocado, pitted and diced
  2. 2 tablespoons sundried tomato
  3. 1 tablespoon finely chopped red onion
  4. 1/2 teaspoon chopped cilantro
  5. Salt
  6. 4 egg roll wrappers
  7. 1 beaten egg

Ingredients for Dipping Sauce

  1. 4 TSP white vinegar
  2. 1 TSP balsamic vinegar
  3. 1/2 cup honey
  4. 1/2 teaspoon tamarind concentrate
  5. Pinch of turmeric
  6. 1/2 cup chopped cashews
  7. 2/3 cup chopped cilantro
  8. 2 cloves garlic
  9. 2 green onions
  10. 1 TBS sugar
  11. 1 TSP pepper
  12. 1 TSP cumin
  13. 1/4 cup Olive Oil

    (Blend all ingredients together in food processor or blender)

INSTRUCTIONS FOR EGGROLLS

  1. Preheat oven to 400 degrees
  2. Stir together avocado, sundried tomato, red onion, salt, and cilantro.
  3. Beat the egg
  4. Place some of the filling in the center of the wrapper
  5. Fold in the left and right corners, dab with water, roll the wrapper and dab with more water to seal it.
  6. Brush with egg wash
  7. Add to oven for 25-30 minutes or until desired crispiness.
