Chopped portobello mushroom
Chopped sundried tomato
Shredded mozzarella cheese
Pepper jack cheese
Start by sauteeing your onion. Once translucent add the chopped mushrooms and garlic. Then add spinach, sundried tomato, salt and pepper. After 1-2 minutes add the marinara sauce and let simmer for another 1-2 minutes. Once your sauce is ready, take it off the stove.
Preheat oven to 350 degrees and Grease the bottom of a pyrex. Put water in a plate and dip each whole matzah in the water for 15 seconds to moisten the matzah then add one layer of the matzah on the bottom of the Pyrex. Top with some of the marinara/veggie mix, spread ricotta cheese, then add shredded mozzarella. Then add 2 more moistened matzahs, topped with marinara, etc and keep going until you you have 3-4 layers. On the top layer add the fresh mozzarella and pepper jack cheese. Put in the oven and cook for 30 minutes. Once cheese is fully melted you’re ready to eat!
You can improvise with different cheeses, but I highly recommend using ricotta as one of your main cheeses
