Saffron Salmon & Zucchini Spirals

Ingredients for Salmon:

  • 1 pound skinless fresh Atlantic Salmon
  • Juice of 1/2 lemon
  • 4-5 tablespoons saffron water (crushed saffron threads mixed with boiling hot water)
  • 1 tablespoon chopped garlic
  • 2-3 lemon slices (to add on top of the salmon before putting in the oven)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
    • Marinade all ingredients (except for lemon slices) with salmon in the refrigerator for 1-2 hours before cooking

Instructions for Salmon:

  1. Preheat oven to 350 degrees
  2. Add salmon to a greased oven safe dish and top with lemon slices.
  3. Cook for about 30 minutes in the oven
  4. Serve and enjoy!

Ingredients for Zucchini Spirals:

  • 1 large zucchini, cut in half
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 2 Wooden skewers

Instructions for Zucchini Skewers:

  1. Preheat oven to 400 degrees
  2. In a bowl mix your bread crumbs, Parmesan cheese, salt, pepper, paprika
  3. Pierce each zucchini with a skewer
  4. Hold your knife at an angle and cut the zucchini, twisting slowly and continuing to cut until the end
  5. Drizzle with olive oil then sprinkle your bread crumb mixture until the zucchini is fully coated
  6. Add to oven and cook for 30-45 minutes, turning halfway
  7. Serve with your favorite dipping sauce and enjoy!
