
Ingredients for Salmon:
- 1 pound skinless fresh Atlantic Salmon
- Juice of 1/2 lemon
- 4-5 tablespoons saffron water (crushed saffron threads mixed with boiling hot water)
- 1 tablespoon chopped garlic
- 2-3 lemon slices (to add on top of the salmon before putting in the oven)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Marinade all ingredients (except for lemon slices) with salmon in the refrigerator for 1-2 hours before cooking
Instructions for Salmon:
- Preheat oven to 350 degrees
- Add salmon to a greased oven safe dish and top with lemon slices.
- Cook for about 30 minutes in the oven
- Serve and enjoy!
Ingredients for Zucchini Spirals:
- 1 large zucchini, cut in half
- 1/2 cup panko breadcrumbs
- 1/2 cup Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- 2 Wooden skewers
Instructions for Zucchini Skewers:
- Preheat oven to 400 degrees
- In a bowl mix your bread crumbs, Parmesan cheese, salt, pepper, paprika
- Pierce each zucchini with a skewer
- Hold your knife at an angle and cut the zucchini, twisting slowly and continuing to cut until the end
- Drizzle with olive oil then sprinkle your bread crumb mixture until the zucchini is fully coated
- Add to oven and cook for 30-45 minutes, turning halfway
- Serve with your favorite dipping sauce and enjoy!
