Garlic & Herb Marinated Lamb Chops with Stuffed Mushrooms and a Beet/Roasted Carrot Salad

Ingredients for Lamb Chops:

  • 4 pieces lamb chops
  • 1/2 cup chopped cilantro
  • 1/3 cup chopped parsley
  • 1/2 teaspoon chopped garlic
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • Dash of pepper
    • Mix all ingredients together and marinate for at least 1-2 hours

Instructions for Lamb Chops:

  1. Remove lamb chops from the fridge 20-30 minutes before cooking.
  2. Heat a cast iron skillet or a pan over a medium high heat. In the skillet, place the chops narrow fat side down. You need to keep them balanced and to press the chops down so that the fat renders and turns crisp and brown. Takes about 5 minutes.
  3. Once the fat has melted into the pan, lay the chops flat on one of their sides. Cook for another 2-3 minutes until browned and then turn and cook on the other side.
  4. Turn the heat to medium-low. Using a spoon, pour out the fat and then add 1 teaspoon butter. Baste the chops with the butter and serve.

Ingredients for Stuffed Mushrooms:

  • 1 package shiitake or Portobello mushrooms
  • 1/2 cup panko bread crumbs
  • 2-4 tablespoons grated Parmesan cheese
  • 1/2 teaspoon butter
  • Olive oil

Instructions for Stuffed Mushrooms:

  1. Preheat oven to 350 degrees
  2. Wash and clean mushrooms (take off caps if they have)
  3. Add mushrooms to an oven safe pan and drizzle with olive oil. Cook for 15-20 minutes, or until cooked well.
  4. Meanwhile, add the 1/2 teaspoon of butter and the bread crumbs to a pan on medium/high heat and let the bread crumbs brown a bit. Take off heat.
  5. Take the mushrooms out of the oven and and switch your oven to broil on high heat.
  6. Top each mushroom with bread crumbs and Parmesan cheese and add back into the oven for 5 minutes or until it looks crispy and browned.

Ingredients for Beet Salad:

  • 1 package pre-cooked beets (I got the pre-cooked package from Trader Joe’s, but you can also cook your own beets). Slice beets into thin slices
  • 3-4 medium sized carrots (drizzled with olive oil and roasted in the oven in 350 degrees for 10 minutes). Once cooked, thinly slice the carrots
  • 1/2 cup chopped cilantro
  • 2 tablespoons red wine vinegar
  • Juice of 1/2 lemon
  • 3 tablespoons olive oil
  • Dash of salt and pepper
  • Crumbled feta cheese
    • Mix all ingredients together
