
Ingredients for Pasta
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 cloves garlic, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 package ground beef
- 1/2 cup red wine
- 1 can diced tomatoes
- 1 package pasta of your choice (I used Fettucine)
- Salt and pepper
- Pinch of nutmeg
- Grated Parmesan cheese
Instructions for Pasta:
- Heat the olive oil in a frying pan over medium heat.
- Add the diced onions and cook until soft. Then add the chopped garlic and cook until it is fragrant (be careful not to burn the garlic)
- Add the carrots and celery and cook until both are starting to soften.
- Add the ground beef and cook, breaking up with a wooden spatula until it is broken down into small pieces and no pink remains.
- Deglaze the pan with the red wine and add the tomatoes, salt and pepper.
- Cover and simmer on low heat for 40 minutes until thickened. The sauce should be shiny and completely free of water. Once thickened, remove from heat.
- Cook your prepared pasta in a large pot of salted boiling water and according to package instructions. Try not to overcook your pasta, al dente is best.
- Toss together the pasta and bolognese sauce.
- Top with Parmesan cheese.
Ingredients/Instructions for Salad:
- 3 cups chopped romaine lettuce
- 1/2 cup chopped tomatoes
- 1/3 cup chopped green olives
- 1/3 cup chopped sundried tomatoes
- 1/2 red onion, sliced very thinly
- 1/4 sliced beef salami
- Sliced Mozarella cheese
- Mix all ingredients together with your favorite Italian dressing
