Fettuccine Bolognese & Chopped Salad

Ingredients for Pasta

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 cloves garlic, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 package ground beef
  • 1/2 cup red wine
  • 1 can diced tomatoes
  • 1 package pasta of your choice (I used Fettucine)
  • Salt and pepper
  • Pinch of nutmeg
  • Grated Parmesan cheese

Instructions for Pasta:

  1. Heat the olive oil in a frying pan over medium heat.
  2. Add the diced onions and cook until soft. Then add the chopped garlic and cook until it is fragrant (be careful not to burn the garlic)
  3. Add the carrots and celery and cook until both are starting to soften.
  4. Add the ground beef and cook, breaking up with a wooden spatula until it is broken down into small pieces and no pink remains.
  5. Deglaze the pan with the red wine and add the tomatoes, salt and pepper.
  6. Cover and simmer on low heat for 40 minutes until thickened. The sauce should be shiny and completely free of water. Once thickened, remove from heat.
  7. Cook your prepared pasta in a large pot of salted boiling water and according to package instructions. Try not to overcook your pasta, al dente is best.
  8. Toss together the pasta and bolognese sauce.
  9. Top with Parmesan cheese.

Ingredients/Instructions for Salad:

  • 3 cups chopped romaine lettuce
  • 1/2 cup chopped tomatoes
  • 1/3 cup chopped green olives
  • 1/3 cup chopped sundried tomatoes
  • 1/2 red onion, sliced very thinly
  • 1/4 sliced beef salami
  • Sliced Mozarella cheese
    • Mix all ingredients together with your favorite Italian dressing
