Chicken & Salmon Skewers and Greek Salad Skewers

This was a really fun and unique way to entertain guests! I made Greek inspired chicken and salmon skewers and thought that since making salad on the skewers too would be a fun addition. And boy, was I right! My guests absolutely loved it!

Ingredients for Skewers:

  • 2 pounds chicken thigh or breast, cut into 1 inch pieces
  • 2 pounds BBQ cut salmon, cut into 1 inch cubes
  • Garlic, chopped- 1 teaspoon for chicken and 1 teaspoon for salmon
  • 1 cup olive oil , 1/2 for chicken and 1/2 for salmon
  • 1 cup chopped fresh dill, 1/2 for chicken and 1/2 for salmon
  • 4 teaspoons salt, 2 teaspoons for chicken and 2 for salmon
  • 2 teaspoons pepper, 1 for chicken and 1 for salmon
  • Skewer sticks (oven safe)

Ingredients for Skewers:

  1. Add all chicken ingredients in one bowl and all salmon ingredients in another bowl and marinate in the refrigerator for 3-4 hours.
  2. Preheat oven to 350 degrees
  3. Take chicken and salmon out of the oven. Begin adding piece by piece on a stick, about 4-5 pieces on each stick
  4. Add to oven and cook for 30-45 minutes

Ingredients/Instructions for Greek Salad Skewers:

  • 2 Persian cucumbers, cut into 1 inch thick cubes
  • 2-3 tomatoes (I used Roma), cut into cubes
  • 1 block feta cheese, cut into cubes
  • 1 can extra large whole black olives
  • 1 red onion cut into small bite sized pieces
  • Wooden skewers
    1. Add each piece one by one to the skewer

Ingredients for Greek Salad Dressing

  • 1/2 cup olive oil
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1.5 tablespoons dried Oregano
  • 1/2 teaspoon red wine vinegar
    • Add all ingredients to a bowl and mix well. Drizzle on top of skewers
