Salmon Caprese Skewers and Roasted Artichokes

Ingredients for Artichokes:

  • 4 small artichokes (I got mine from #traderjoes)
  • Salt
  • Pepper
  • Olive oil
  • Minced Garlic

Instructions for Artichokes:

  1. Cut off half the stem
  2. Trim the leaves
  3. Cut off the top 1/3 portion of the artichoke
  4. Soak artichokes in a medium bowl with cold water, juice of one lemon and the lemons for 1 hour
  5. Boil the artichokes for 30-45 minutes or until the leaves easily come off
  6. Once cooked, take the artichokes out and let them cool a bit
  7. While they’re cooling, set your broiler on high
  8. Cut the artichokes in half
  9. With a spoon, take out the middle portion (this is called the “choke” – the fuzzy/hairy part) very gently so the artichoke doesn’t break.
  10. In a bowl mix together olive oil, salt, pepper and garlic. With a brush, brush the mixture onto each artichoke
  11. Broil in the oven for 5-8 minutes

Ingredients for Artichoke Dip:

  • 1/2 cup mayonnaise
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon pepper
  • 1 teaspoon sugar
  • 1 tablespoon dried dill
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon Sumac
  • 1 teaspoon Paprika
  • Juice of 1/2 lemon
  • 1 tablespoon Chopped fresh basil

(Mix all ingredients together)

Ingredients for Salmon:

  • Alaskan Wild Caught Salmon (Got mine from #traderjoes)
  • 1/2 cup Panko breadcrumbs
  • 3 tablespoons dried basil
  • 1/3 cup grated Parmesan
  • 1 teaspoon minced garlic
  • Zest of 1 lemon
  • Salt
  • Pepper
  • Avocado Oil

Instructions for Salmon:

  1. Preheat oven to 350 degrees
  2. In a bowl, mix together bread crumbs, garlic, dried basil, Parmesan, lemon zest, salt and pepper
  3. Drizzle Avocado Oil on top of the salmon
  4. Firmly press the mix on top of the salmon
  5. Cut salmon into 1 inch cubes
  6. Grease an oven safe pan and add salmon pieces.
  7. Bake for 15-20 minutes

Ingredients for Skewers:

  • Wooden skewer sticks
  • Cooked Salmon
  • Cherry tomatoes
  • Fresh basil leaves
  • Mozarella balls (Trader Joe’s)
  • Balsamic Glaze (Trader Joe’s)

Instructions for Skewers:

  1. Start by adding a Mozarella ball to the skewer. Push it down to the bottom
  2. Next, add a basil leaf
  3. Add a tomato
  4. Add a piece of salmon
  5. Continue adding until the skewer is filled
  6. Drizzle with balsamic glaze
