
Ingredients for Artichokes:
- 4 small artichokes (I got mine from #traderjoes)
- Salt
- Pepper
- Olive oil
- Minced Garlic
Instructions for Artichokes:
- Cut off half the stem
- Trim the leaves
- Cut off the top 1/3 portion of the artichoke
- Soak artichokes in a medium bowl with cold water, juice of one lemon and the lemons for 1 hour
- Boil the artichokes for 30-45 minutes or until the leaves easily come off
- Once cooked, take the artichokes out and let them cool a bit
- While they’re cooling, set your broiler on high
- Cut the artichokes in half
- With a spoon, take out the middle portion (this is called the “choke” – the fuzzy/hairy part) very gently so the artichoke doesn’t break.
- In a bowl mix together olive oil, salt, pepper and garlic. With a brush, brush the mixture onto each artichoke
- Broil in the oven for 5-8 minutes
Ingredients for Artichoke Dip:
- 1/2 cup mayonnaise
- 2 teaspoons apple cider vinegar
- 1 teaspoon pepper
- 1 teaspoon sugar
- 1 tablespoon dried dill
- 1 tablespoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon Sumac
- 1 teaspoon Paprika
- Juice of 1/2 lemon
- 1 tablespoon Chopped fresh basil
(Mix all ingredients together)
Ingredients for Salmon:
- Alaskan Wild Caught Salmon (Got mine from #traderjoes)
- 1/2 cup Panko breadcrumbs
- 3 tablespoons dried basil
- 1/3 cup grated Parmesan
- 1 teaspoon minced garlic
- Zest of 1 lemon
- Salt
- Pepper
- Avocado Oil
Instructions for Salmon:
- Preheat oven to 350 degrees
- In a bowl, mix together bread crumbs, garlic, dried basil, Parmesan, lemon zest, salt and pepper
- Drizzle Avocado Oil on top of the salmon
- Firmly press the mix on top of the salmon
- Cut salmon into 1 inch cubes
- Grease an oven safe pan and add salmon pieces.
- Bake for 15-20 minutes
Ingredients for Skewers:
- Wooden skewer sticks
- Cooked Salmon
- Cherry tomatoes
- Fresh basil leaves
- Mozarella balls (Trader Joe’s)
- Balsamic Glaze (Trader Joe’s)
Instructions for Skewers:
- Start by adding a Mozarella ball to the skewer. Push it down to the bottom
- Next, add a basil leaf
- Add a tomato
- Add a piece of salmon
- Continue adding until the skewer is filled
- Drizzle with balsamic glaze
