
Teriyaki Chicken #Pineapple Boats with Fried Rice
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗳𝗼𝗿 𝘁𝗲𝗿𝗶𝘆𝗮𝗸𝗶 𝗰𝗵𝗶𝗰𝗸𝗲𝗻:
1 pineapple
1 pound chicken thighs, cut into cubes
¾ cup soy sauce
¼ cup brown sugar
¼ cup honey
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 𝗳𝗼𝗿 𝗳𝗿𝗶𝗲𝗱 𝗿𝗶𝗰𝗲:
2 cups cooked white rice
Diced carrots (I used 3)
3/4 Peas (mine was frozen, fresh is better)
1 chopped yellow onion
1 teaspoon butter
1/4 cup soy sauce
Salt
Pepper
*𝗖𝘂𝘁 𝗽𝗶𝗻𝗲𝗮𝗽𝗽𝗹𝗲 𝗶𝗻 𝗵𝗮𝗹𝗳. 𝗨𝘀𝗲 𝗮 𝘀𝗽𝗼𝗼𝗻 𝘁𝗼 𝘀𝗰𝗼𝗼𝗽 𝗼𝘂𝘁 𝘁𝗵𝗲 𝗳𝗹𝗲𝘀𝗵 𝗼𝗳 𝗲𝗮𝗰𝗵 𝗵𝗮𝗹𝗳 𝗼𝗳 𝗽𝗶𝗻𝗲𝗮𝗽𝗽𝗹𝗲, 𝗰𝗵𝗼𝗽 𝘁𝗵𝗲 𝗽𝗶𝗻𝗲𝗮𝗽𝗽𝗹𝗲 𝗳𝗹𝗲𝘀𝗵 𝗳𝗼𝗿 𝘁𝗵𝗲 𝗳𝗿𝗶𝗲𝗱 𝗿𝗶𝗰𝗲. *
𝘐𝘕𝘚𝘛𝘙𝘜𝘊𝘛𝘐𝘖𝘕𝘚 𝘍𝘖𝘙 𝘊𝘏𝘐𝘊𝘒𝘌𝘕:
Heat the oil in a large skillet over high heat. Add the chicken thighs and cook, stirring occasionally, 2 minutes. Add soy sauce, brown sugar, and honey and stir to combine. Bring the mixture to a boil, then turn the heat down to medium-low and cook, stirring occasionally, until the sauce is thick and the chicken is cooked through for about 15 minutes.
𝘐𝘕𝘚𝘛𝘙𝘜𝘊𝘛𝘐𝘖𝘕𝘚 𝘍𝘖𝘙 𝘙𝘐𝘊𝘌:
Steam carrots and peas (if frozen) until soft.
Cook 2 cups white rice.
Heat up oil in a pan. Add chopped onions and cooked until translucent. Add peas and carrots and sauté with butter, salt and pepper. Move the veggies to the side of the pan, add the two eggs and scramble. Then mix the egg and veggies together. Add rice, pineapple and soy sauce and sauté for a minute. Turn off heat.
Scoop a cup of rice into each pineapple boat then add the teriyaki chicken and enjoy!!
