Israeli #shakshuka Breakfast

Ingredients ⁣
3 tablespoon Tomato paste ⁣
1 can diced tomatoes ⁣
1 Onion, chopped
4-5 Eggs⁣
Chopped Cilantro ⁣
Sliced Avocado ⁣
Crumbled Feta cheese ⁣
1/2 teaspoon Chopped Garlic ⁣
1 teaspoon Salt⁣
1/2 teaspoon Pepper ⁣
3/4 teaspoon ground Cumin⁣
1/2 teaspoon Paprika⁣

Start by sauteeing your onions in a pan on medium-high heat. Next add your tomato paste and sautee together for a minute so the paste breaks up. Add your garlic for about 30 seconds then reduce to simmer. Add the can of tomatoes, salt, pepper and cumin and let simmer for a minute so the tomatoes cook a bit.⁣

Next, make about 5-6 wells/holes for the eggs and add an egg into each well. Sprinkle with salt and pepper and cover the lid so the eggs cook through. Best to have the eggs a little runny, but it’s a personal preference. ⁣

Once you’re ready to eat, sprinkle the feta and cilantro and add your sliced avocado. I served with sliced watermelon and grapes to give it the full Israeli feel. ⁣
