Greek Salad

Ingredients for Salad:

  • 1 cup cut Persian Cucumbers
  • 1 cup cherry tomatoes
  • 1 cup black olives
  • 1/2 cup heart of palm
  • 3/4 cup hericot verts, steamed
  • 1/2 cup red onion, sliced
  • 1 cup feta cheese
  • 1/2-1 pound chicken thighs
    • Marinate the chicken in lemon juice, olive oil, salt and pepper for at least 1 hour then saute in a pan for 5 minutes on each side or until fully cooked

Ingredients for Salad Dressing

  • 1/2 cup olive oil
  • 3 tablespoons red wine vinegar
  • Juice of 1/2 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Dash of Zaatar seasoning (optional)
    • Mix all ingredients together really well
