
Ingredients for Salad:
- 1 cup cut Persian Cucumbers
- 1 cup cherry tomatoes
- 1 cup black olives
- 1/2 cup heart of palm
- 3/4 cup hericot verts, steamed
- 1/2 cup red onion, sliced
- 1 cup feta cheese
- 1/2-1 pound chicken thighs
- Marinate the chicken in lemon juice, olive oil, salt and pepper for at least 1 hour then saute in a pan for 5 minutes on each side or until fully cooked
Ingredients for Salad Dressing
- 1/2 cup olive oil
- 3 tablespoons red wine vinegar
- Juice of 1/2 lemon
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Dash of Zaatar seasoning (optional)
- Mix all ingredients together really well
